Chilled Chocolate Charm
A creamy chocolate-chip coffee ice cream made with Bone Chilled, vanilla, dark chocolate, and an optional caramel-hazelnut finish.
The Chilled Chocolate Charm is coffee and dessert reaching what seems like a very sensible agreement.
Strongly brewed Bone Chilled joins cream, milk, vanilla, and finely chopped chocolate for a frozen dessert that keeps the coffee firmly in the picture.
Unlike a blended coffee drink, this one requires patience. The reward is proper scoopable coffee ice cream with little pieces of chocolate running through it.
Caramel and hazelnuts are optional. Restraint, apparently, is also optional.

Cold base, smoother ice cream. Chill the coffee and finished ice cream base thoroughly before churning. A colder mixture freezes faster and usually forms smaller ice crystals.
Coffee Ratio
For the coffee base, start with:
24 g coffee : 240 g/ml water
That's approximately a 1:10 coffee-to-water ratio.
This is intentionally much stronger than an everyday cup. The coffee has to compete with cream, milk, sugar, chocolate, and freezing, all of which soften its perceived intensity.
If you're measuring without a scale:
About 4-5 level tablespoons ground coffee : 8 oz water
Directions
1. Brew the Chill
Brew 240 ml / 8 oz of Bone Chilled at approximately a 1:10 coffee-to-water ratio.
Let the coffee cool, then refrigerate it until completely chilled.
2. Build the Cream Base
Add 2 cups heavy cream, 1 cup whole milk, and 3/4 cup sugar to a medium saucepan.
Heat gently over medium-low heat, stirring regularly, until the sugar has completely dissolved.
Do not boil the mixture.
3. Add the Coffee
Remove the saucepan from the heat.
Whisk in the chilled concentrated Bone Chilled coffee until evenly combined.
4. Add the Vanilla
Stir in 1 teaspoon vanilla extract.
Let the mixture cool to room temperature, then cover and refrigerate for at least 2 hours, preferably until thoroughly cold.
5. Churn the Charm
Pour the chilled mixture into your ice cream maker.
Churn according to the manufacturer's instructions until it reaches a thick soft-serve consistency.
6. Add the Chocolate
During the final few minutes of churning, add 1/3 cup finely chopped chocolate.
Finely chopped chocolate works better than large chunks here because frozen chocolate becomes quite firm.
7. Let It Rest
Transfer the churned ice cream to a freezer-safe container.
Cover and freeze for at least 4 hours, or until firm enough to scoop.
8. Serve the Charm
Let the ice cream sit at room temperature for about 5-10 minutes if it is very firm.
Scoop into bowls or cones.
Finish with caramel sauce and crushed toasted hazelnuts if desired.
Skeleton Brew Tip
Chop the chocolate smaller than you think.
Chocolate firms considerably at freezer temperature.
Large chunks that seem perfectly reasonable at room temperature can become tiny chocolate paving stones once frozen.
Finely chopped chocolate gives you small pockets of flavor without making every spoonful a dental negotiation.
Make It Your Own
- Mocha Charm: Add 1-2 tablespoons cocoa powder to the warm cream mixture.
- Caramel Bones: Swirl caramel sauce through the ice cream just before the final freeze.
- Hazelnut Haunt: Fold toasted chopped hazelnuts into the ice cream with the chocolate.
- Extra Dark: Use finely chopped 70% dark chocolate for a more bittersweet finish.
- Chocolate-Free Charm: Leave out the chocolate and let Bone Chilled remain the sole star.
- Affogato Afterlife: Pour a small shot of hot espresso over a scoop immediately before serving.
- Bare Bones: Serve it plain with no toppings at all.
Why It Works
Frozen desserts need stronger flavor than their room-temperature counterparts because cold suppresses both aroma and perceived sweetness.
That's why this recipe uses concentrated Bone Chilled rather than a normal-strength cup of coffee.
Cream contributes richness and smooth texture, while whole milk keeps the base from becoming excessively heavy. Sugar does more than sweeten: it also lowers the freezing point, helping the ice cream remain softer and easier to scoop.
Vanilla rounds out the coffee, while finely chopped chocolate adds small bursts of bitterness and sweetness without overwhelming the base.
The result should taste like coffee ice cream with chocolate—not chocolate ice cream that once heard a rumor about coffee.
Recommended Brew
Bone Chilled
Bone Chilled replaces the retired Chilled Bones as the featured coffee for Chilled Chocolate Charm.
This recipe needs a coffee that can remain recognizable after dairy, sugar, chocolate, and freezing all begin softening its intensity.
Brewing Bone Chilled as a concentrated 1:10 base gives the finished ice cream enough coffee character to remain central to the dessert.

From the Coffee Corner
Cold temperatures change more than whether something feels refreshing.
They change how intensely we perceive sweetness, aroma, and flavor, which is why recipes designed for the freezer often need different proportions than drinks served hot.
Learning that gives you another tool for creating with coffee rather than simply brewing it.
Once you start treating coffee as an ingredient, your Coffee Corner can wander quite happily into the dessert menu.
