A cozy Irish coffee-style drink made with Bone Rattler, brown sugar, Irish whiskey, lightly whipped cream, and a dusting of cocoa.

The Emerald Isle Elixir is warm, sweet, and just a little celebratory.

Built on a strong French press brew of Bone Rattler, this recipe blends coffee, brown sugar, and Irish whiskey, then finishes with a soft layer of lightly whipped cream.

It is rich without being overly fussy, festive without requiring shamrock-shaped anything, and perfectly suited to a slow evening or a St. Patrick’s Day toast.

The optional green coloring is there if you want the extra holiday wink. The drink absolutely does not need it.

Ingredients

  • 32 g Bone Rattler coffee, coarsely ground for French press
    • About 6 level tablespoons ground coffee if you don't have a scale
  • 480 ml / 16 oz water
  • 2 tablespoons brown sugar
  • 60 ml / 1/4 cup Irish whiskey
  • 120 ml / 1/2 cup heavy cream, lightly whipped
  • Cocoa powder, for garnish
  • 1-2 drops green food coloring, optional

Equipment

  • Two heatproof mugs or Irish coffee glasses

Lightly whip the cream, but do not take it all the way to stiff peaks. You want it thick enough to float, but still pourable enough to settle gently over the coffee.

Coffee Ratio

Start with:

32 g coffee : 480 g/ml water

That's approximately a 1:15 coffee-to-water ratio.

This makes a strong, balanced coffee with enough structure to stand up to whiskey, sugar, and cream.

If you're measuring without a scale:

About 6 level tablespoons ground coffee : 16 oz water

Directions

1. Brew the Base

Add 32 g coarsely ground Bone Rattler to a French press.

Heat 480 ml / 16 oz water to just off the boil, ideally around 200°F / 93°C.

Pour the water over the grounds, making sure all of the coffee is saturated.

2. Let It Steep

Give the coffee a gentle stir, place the lid on the French press without plunging, and steep for 4 minutes.

3. Prepare the Cream

While the coffee brews, pour 1/2 cup heavy cream into a bowl and whisk until it thickens slightly.

You want a soft, lightly whipped consistency that can float on top of the drink rather than disappear into it.

4. Press and Pour

Press the French press plunger down slowly and evenly.

Divide the brewed coffee between two mugs.

5. Add the Spirit

Stir 1 tablespoon brown sugar into each mug until dissolved.

Add 2 tablespoons Irish whiskey to each mug and stir gently.

If you want the festive version, add 1 drop of green food coloring to each mug and stir lightly. This is purely optional.

6. Float the Cream

Carefully spoon the lightly whipped cream over the back of a spoon so it settles on top of each drink in a soft layer.

The goal is a creamy cap on top rather than fully mixed cream throughout.

7. Finish the Elixir

Dust the cream lightly with cocoa powder.

Serve immediately while warm.

Pour the cream over the back of a spoon.

If you pour it directly into the mug, it is much more likely to sink into the coffee.

Using the spoon slows the cream down and helps it settle gently on top, which gives you that classic layered Irish coffee look and texture.

Make It Your Own

  • Bare Bones Isle: Skip the cocoa and food coloring and keep it simple.
  • More Creamy: Add a slightly thicker cream layer if you want a richer finish.
  • Less Sweet: Reduce the sugar to 2 teaspoons per mug.
  • Cinnamon Mist: Add a tiny pinch of cinnamon along with or instead of cocoa powder.
  • Vanilla Whisper: Add a few drops of vanilla extract to the cream before whipping.
  • Spirit-Free Version: Omit the whiskey for a sweet cream coffee with a similar structure.
  • Salted Isle: Add a tiny pinch of flaky salt to the cream or garnish for a subtle salted-caramel effect.
