A creamy homemade coffee ice cream made with Bone Chilled, sweetened condensed milk, vanilla, and a rich dairy base.

The Skeleton's Icy Delight takes coffee out of the mug entirely.

This frozen dessert starts with chilled Bone Chilled, then folds in cream, sweetened condensed milk, and vanilla for a smooth coffee ice cream you can make with or without an ice cream machine.

It is cold, creamy, coffee-forward, and considerably more interesting than simply drinking yesterday's leftovers over ice.

And if crushed chocolate cookies happen to fall on top, nobody needs to investigate too closely.

What You'll Need

Ingredients

  • 32 g Bone Chilled coffee, ground appropriately for your preferred brewing method
    • About 6 level tablespoons ground coffee if you don't have a scale
  • 480 ml / 16 oz water
  • 360 ml / 1 1/2 cups heavy cream
  • 240 ml / 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • Crushed chocolate cookies, optional
  • Chocolate syrup, optional

  • Coffee grinder, if using whole beans

Chill the coffee completely before mixing. Warm coffee can partially melt the cream mixture and slow freezing, which can lead to larger ice crystals and a rougher texture.

Coffee Ratio

Start with:

32 g coffee : 480 g/ml water

That's approximately a 1:15 coffee-to-water ratio.

This produces a slightly stronger cup than an everyday brew, which helps the coffee remain noticeable once cream, condensed milk, and freezing are added to the equation.

If you're measuring without a scale:

About 6 level tablespoons ground coffee : 16 oz water

Directions

1. Brew the Chill

Brew 480 ml / 16 oz of Bone Chilled using approximately a 1:15 coffee-to-water ratio and your preferred brewing method.

Let the coffee cool to room temperature, then refrigerate it until completely chilled.

2. Build the Ice Cream Base

In a large mixing bowl, combine:

  • 480 ml / 16 oz chilled coffee
  • 360 ml / 1 1/2 cups heavy cream
  • 240 ml / 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract

Whisk until the mixture is smooth and completely combined.

3. Taste Before Freezing

Taste the mixture before it goes into the freezer.

Remember that frozen foods taste less sweet and less aromatic than they do at room temperature, so the mixture should taste slightly sweeter and more intense than you expect the finished ice cream to be.

4. Churn the Ice Cream

If using an ice cream maker, pour the chilled mixture into the machine and churn according to the manufacturer's instructions.

Continue until the mixture reaches a thick, soft-serve consistency.

5. No Machine? No Problem.

If you don't have an ice cream maker, pour the mixture into a shallow freezer-safe container.

Freeze for about 30-45 minutes, then stir vigorously with a fork or whisk.

Repeat every 30-45 minutes for approximately 2-3 hours to break up ice crystals and encourage a smoother texture.

6. Freeze Until Firm

Transfer the churned or hand-mixed ice cream to a freezer-safe container.

Cover and freeze for at least 4 hours, or until firm enough to scoop.

7. Serve the Icy Delight

Let the ice cream sit at room temperature for about 5-10 minutes before scooping if it is very firm.

Serve in bowls or cones.

Top with crushed chocolate cookies, chocolate syrup, or both if desired.

The colder the mixture is before freezing, the faster it sets.

Faster freezing generally means smaller ice crystals, which gives the finished ice cream a smoother texture.

  • Mocha Bones: Add 2 tablespoons chocolate syrup to the base before freezing.
  • Cookie Crypt: Fold crushed chocolate sandwich cookies into the ice cream during the final minutes of churning.
  • Vanilla Chill: Increase the vanilla slightly for a softer dessert profile.
  • Dark Chocolate Graveyard: Fold in finely chopped dark chocolate before the final freeze.
  • Caramel Freeze: Swirl caramel sauce through the ice cream just before transferring it to the freezer.
  • Bare Bones: Serve it plain and let the coffee carry the dessert.
