Algerian Ghost Chill Mazagran

A bright, refreshing iced coffee that pairs bold Bone Chilled coffee with fresh lemon and just enough sweetness to bring the two together.

Coffee and lemon might sound like an unlikely combination. Mazagran has been proving otherwise for generations.

Named for Mazagran in Algeria, this early cold-coffee tradition traveled and changed over time, developing different versions across France, Portugal, and elsewhere. Lemon became a particularly popular addition, creating a drink that lands somewhere between iced coffee and coffee lemonade.

Our Algerian Ghost Chill Mazagran keeps things simple: freshly brewed Bone Chilled, lemon, a touch of sweetness, and plenty of ice.

It's bright, unusual, inexpensive to make, and requires nothing more elaborate than the equipment you already use to brew your morning coffee.

What You'll Need

Ingredients

  • 16 g Bone Chilled coffee, ground appropriately for your preferred brewing method
    • About 3 level tablespoons ground coffee if you don't have a scale
  • 240 ml / 8 oz water
  • 15 ml / 1 tablespoon fresh lemon juice
  • 10 ml / 2 teaspoons simple syrup, optional and adjustable to taste
  • Ice
  • Lemon slice or twist, optional

Equipment

  • Your preferred coffee brewer
  • Coffee grinder, if using whole beans
  • Tall glass
  • Kitchen scale, recommended but optional

No scale? No problem. Household measurements will get you a good Mazagran. A small kitchen scale simply makes it easier to recreate the version you like best.

Coffee Ratio

Start with:

16 g coffee : 240 g/ml water

That's approximately a 1:15 coffee-to-water ratio.

This is slightly stronger than a typical everyday cup, which helps the coffee retain its character after the lemon and melting ice join the glass.

If you're measuring without a scale:

About 3 level tablespoons ground coffee : 8 oz water

Directions

1. Brew the Bones

Brew 240 ml / 8 oz of Bone Chilled using your preferred method.

Aim for a slightly stronger cup than you might normally drink black. Once brewed, let the coffee cool to room temperature or refrigerate it until chilled.

2. Add the Citrus

Add 1 tablespoon fresh lemon juice to a tall glass.

Stir in 2 teaspoons simple syrup, if using.

Start there. You can always add more lemon or sweetness after tasting.

3. Bring on the Chill

Fill the glass generously with ice.

Pour the cooled Bone Chilled coffee over the ice and stir well.

4. Taste Before You Tinker

Take a sip.

Want it brighter? Add a little more lemon.

Too sharp? Add another splash of simple syrup.

The goal is balance: you should still taste the coffee rather than turning it into lemonade with a caffeine problem.

5. Garnish and Serve

Finish with a lemon wheel or twist if you'd like.

Serve immediately while cold.

Skeleton Brew Tip

Use simple syrup instead of granulated sugar in cold coffee.

Granulated sugar dissolves poorly once your drink is cold. Simple syrup mixes almost instantly, making it much easier to adjust the sweetness of your Mazagran a little at a time.

You don't need to buy it, either. Equal parts sugar and hot water, stirred until dissolved, will do the job.

Make It Your Own

Mazagran has developed plenty of regional and modern variations, so don't be afraid to experiment.

  • Sparkling Ghost: Replace a small portion of the water with chilled sparkling water just before serving for a lighter, more effervescent drink.
  • Minted Mazagran: Add a few lightly bruised fresh mint leaves for an extra cooling note.
  • Extra Citrus: Add a strip of lemon zest to emphasize the lemon aroma without substantially increasing the drink's acidity.
  • Sweeter Chill: Increase the simple syrup a teaspoon at a time if you prefer something closer to coffee lemonade.
  • Straight to the Crypt: Skip the sweetener entirely for the sharpest contrast between coffee and citrus.

Why It Works

Coffee and lemon create contrast.

Coffee brings roasted flavors, aroma, body, and bitterness. Fresh lemon contributes acidity and an intense citrus aroma. A small amount of sweetness softens the sharpest edges of both without hiding either one.

Serving everything cold changes the experience again. Chilling can soften some of coffee's perceived bitterness, while the lemon keeps the finished drink tasting bright and refreshing.

The result shouldn't taste like ordinary iced coffee with lemon accidentally dropped into it. When the balance is right, the coffee, citrus, sweetness, and dilution from the ice become a drink of their own.
