Dapper Morning Spritzer

A bright, sparkling coffee spritzer made with Brew Sky, fresh lemon, mint, and a touch of sweetness.

Cold coffee doesn't always have to mean milk, cream, or a blender.

The Dapper Morning Spritzer takes chilled Brew Sky and gives it a lighter treatment with sparkling water, lemon, mint, and simple syrup. The result sits somewhere between iced coffee and a refreshing sparkling beverage: crisp, aromatic, and particularly good when the weather is warm.

It also happens to look considerably fancier than the amount of work involved.

Serve it with brunch, make one for a slow weekend morning, or use it whenever an ordinary glass of iced coffee feels a little too ordinary.

What You'll Need

Ingredients

  • 16 g Brew Sky coffee, ground appropriately for your preferred brewing method
    • About 3 level tablespoons ground coffee if you don't have a scale
  • 240 ml / 8 oz water
  • 120 ml / 4 oz chilled sparkling water
  • 15-30 ml / 1-2 tablespoons simple syrup, to taste
  • 2 thin lemon slices
  • 4-6 fresh mint leaves
  • Ice
  • Extra mint and lemon for garnish, optional

  • Coffee grinder, if using whole beans
  • Tall glass

The sparkling water goes in last. Stirring aggressively after adding carbonation knocks out the bubbles you're trying to keep. Build the rest of the drink first, then add the sparkling water and give it only a gentle stir.

Coffee Ratio

Start with:

16 g coffee : 240 g/ml water

That's approximately a 1:15 coffee-to-water ratio.

The slightly stronger brew helps the coffee retain its character once ice and sparkling water dilute the finished drink.

If you're measuring without a scale:

About 3 level tablespoons ground coffee : 8 oz water

Directions

1. Brew the Coffee

Brew 240 ml / 8 oz of Brew Sky at approximately a 1:15 coffee-to-water ratio using your preferred brewing method.

Allow the coffee to cool, then refrigerate it until chilled.

If you're making the spritzer for brunch, this is an easy step to handle ahead of time. Brew the coffee earlier in the morning—or even the night before—and keep it covered in the refrigerator.

2. Wake Up the Mint

Add 4-6 fresh mint leaves to a tall glass and gently press them once or twice with the back of a spoon.

Don't pulverize them. You're trying to release the mint's aroma, not turn the bottom of the glass into lawn clippings.

Add 2 thin lemon slices.

3. Add the Ice and Coffee

Fill the glass generously with ice.

Pour the chilled Brew Sky over the ice.

4. Sweeten to Taste

Add 1 tablespoon simple syrup and stir.

Taste the coffee before adding more. If you prefer a sweeter spritzer, add the second tablespoon a little at a time.

The sweetness should balance the coffee and lemon without overwhelming either one.

5. Add the Sparkle

Top the drink with 120 ml / 4 oz chilled sparkling water.

Stir once or twice, gently, just enough to combine the drink without flattening the carbonation.

6. Garnish and Serve

Add a fresh sprig of mint and a lemon wheel if you'd like.

Serve immediately while the drink is cold and the sparkling water is still lively.

Keep every component cold before you build the drink.

Cold coffee, chilled sparkling water, and plenty of ice give you a crisper spritzer and slow down dilution.

If you pour hot coffee onto ice and then add room-temperature sparkling water, much of the ice immediately becomes additional water. The drink gets weaker before you've had a chance to enjoy it.

Planning ahead by chilling the brewed coffee makes a noticeable difference.

Make It Your Own

The basic formula—coffee, carbonation, citrus, and sweetness—leaves plenty of room to experiment.

  • Drier Dapper: Skip the simple syrup entirely for a sharper, more coffee-forward spritzer.
  • Extra Citrus: Express a strip of lemon peel over the finished drink for more lemon aroma without adding much additional acidity.
  • Mint Condition: Add a few extra mint leaves if you want the herbal character to be more prominent.
  • Orange Spritzer: Replace the lemon with a thin orange slice for softer, sweeter citrus.
  • Extra Sparkle: Use equal parts coffee and sparkling water for a lighter, more effervescent version.
  • Brunch Pitcher: Brew and chill several servings of coffee in advance, then build individual glasses as needed so everyone gets fresh carbonation.
