Skeleton's Minted Brew

A cool, refreshing iced coffee made with Dark Roast Reaper, mint-infused milk, honey, and crushed ice.

The Skeleton's Minted Brew is built for hot days, slow afternoons, and those moments when ordinary iced coffee needs a little more personality.

This version combines Dark Roast Reaper with lightly sweetened mint milk and crushed ice for a drink that is bold, cool, and easy to make at home.

The mint adds freshness without turning the drink into toothpaste, while honey softens the edges and gives the milk a little more body.

Cold, simple, and surprisingly effective.

What You'll Need

Ingredients

  • 16 g Dark Roast Reaper coffee, ground appropriately for your preferred brewing method
    • About 3 level tablespoons ground coffee if you don't have a scale
  • 240 ml / 8 oz water
  • 120 ml / 4 oz whole milk or milk alternative
  • 15 ml / 1 tablespoon mint syrup or 2-3 fresh mint leaves
  • 15 ml / 1 tablespoon honey
  • Crushed ice
  • Fresh mint sprig for garnish, optional

Equipment

  • Your preferred coffee brewer
  • Coffee grinder, if using whole beans
  • Small saucepan
  • Tall glass
  • Spoon
  • Kitchen scale, recommended but optional

Chill both the coffee and mint milk before assembling. Starting cold keeps the crushed ice from melting too quickly and watering down the drink.

Coffee Ratio

Start with:

16 g coffee : 240 g/ml water

That's approximately a 1:15 coffee-to-water ratio.

The slightly stronger brew gives Dark Roast Reaper enough presence to stay recognizable after milk, mint, honey, and ice are added.

If you're measuring without a scale:

About 3 level tablespoons ground coffee : 8 oz water

Directions

1. Brew the Bones

Brew 240 ml / 8 oz of Dark Roast Reaper using approximately a 1:15 coffee-to-water ratio and your preferred brewing method.

Allow the coffee to cool, then refrigerate it until fully chilled.

2. Infuse the Mint

Add 120 ml / 4 oz milk to a small saucepan.

If using fresh mint, add 2-3 mint leaves and warm gently over medium-low heat until steaming but not boiling.

Remove from the heat and let the mint steep for about 3-5 minutes.

If using mint syrup instead, simply warm the milk and stir in 1 tablespoon mint syrup.

3. Add the Honey

Stir 1 tablespoon honey into the warm mint milk until fully dissolved.

If you used fresh mint leaves, remove them now.

Let the milk cool, then refrigerate until chilled.

4. Build the Glass

Fill a tall glass with crushed ice.

Pour the chilled Dark Roast Reaper over the ice.

5. Add the Mint Milk

Slowly pour the chilled mint-and-honey milk over the coffee.

Stir gently until combined.

Taste before adjusting. If you want stronger mint, add a very small amount of additional syrup or lightly bruise a fresh mint leaf and stir it into the drink.

6. Garnish and Serve

Add a fresh mint sprig if desired.

Serve immediately while cold.

Skeleton Brew Tip

Fresh mint and mint syrup behave very differently.

Fresh mint gives a softer, more herbal aroma, while mint syrup delivers a cleaner and much stronger mint flavor.

If you're using syrup, start with less than you think you need. It is much easier to add more mint than to rescue a drink that tastes like mouthwash.

Make It Your Own

  • Fresh Mint Bones: Use fresh mint leaves instead of syrup for a softer herbal version.
  • Extra Chill: Use coffee ice cubes instead of regular crushed ice to reduce dilution.
  • Honey Light: Cut the honey in half for a less sweet drink.
  • Dairy-Free: Use oat, almond, soy, or another milk you enjoy.
  • Chocolate Mint: Add a small amount of chocolate syrup for a mint-mocha variation.
  • Bare Bones: Skip the garnish and keep it to coffee, mint milk, honey, and ice.
  • Sparkling Mint: Add a small splash of chilled sparkling water for a lighter finish.

Why It Works

Mint changes coffee more through aroma than sweetness.

Its cooling herbal character makes a dark coffee feel lighter and more refreshing, especially when served cold.

Milk softens the coffee's bitterness and gives the drink body, while honey adds sweetness and a rounder texture.

The stronger 1:15 brew ratio matters because crushed ice melts quickly. Starting with a more concentrated cup helps the coffee remain balanced as dilution increases.

Recommended Brew

Dark Roast Reaper

Dark Roast Reaper is the featured coffee for Skeleton's Minted Brew.

Its darker roast profile gives the drink enough coffee character to hold up against cold milk, mint, honey, and melting ice.

That contrast is what makes the drink work: bold coffee underneath, cool mint on top.

From the Coffee Corner

Iced coffee is a good place to learn how much temperature changes flavor.

Cold drinks usually seem less aromatic and can taste less intense than the same coffee served hot. Add ice, and dilution becomes part of the recipe too.

That is why this drink works best when both components start cold and the coffee is brewed a little stronger.

Once you understand that, you can start building all sorts of iced drinks around the same basic idea.
