Mabon marks the second harvest—the equinox moment when day and night stand equal before the dark half of the year takes hold. It is a time for gathering in what remains, giving thanks for balance, and pausing at the threshold between abundance and rest.

This medium-dark roast comes from the highlands of Cerro Azul, Honduras, where cool mountain air, volcanic soil, and steady mist create the slow maturation that gives this coffee its layered sweetness. It is produced by COHORSIL (Cooperativa Hormiguitas de Siguatepeque Limitada), a cooperative of smallholder farmers who have spent generations building both a livelihood and a legacy from these hills.

In the cup, Mabon is rich and grounded, with notes of apple, dark chocolate, and nuts—a coffee that feels like the season itself, sweet and a little wistful, warm even as the light begins to fade.

Coffee Notes

Grown at elevations between 1,200 and 1,600 meters in the Cerro Azul region of Honduras, this washed and sun-dried coffee reflects the layered sweetness and balanced acidity that come from slow, mist-cooled ripening. Produced from Typica, Bourbon, and Catuai varietals, it delivers a full-bodied cup with notes of apple, dark chocolate, and nuts.

The coffee is produced by COHORSIL, a cooperative of smallholder farmers dedicated to quality and sustainability. The cooperative provides training, technical assistance, and shared facilities to help producers improve yields while caring for the land, and invests in social programs supporting education and reforestation—reinforcing coffee's role as a force for community growth.
